Happy Monday HelloFreshers! Many of you probably woke up feeling extra fatigued this morning from all those wings and fried foods last night during the Super Bowl. To help you ward off that sluggishness, today’s post will be dedicated to energy-boosting proteins!

A recent study by University of Cambridge found that proteins help perk us up when our energy levels begin to dip. Lucky for you, our delivery this week is packed with protein-rich foods so you’ll be feeling energetic all week at work.

Tofu, a highly nutritious, protein-rich food, is made from the curds of soybean milk. Not only does consuming tofu boost your energy levels, but it also protects against cardiovascular diseases. Tofu is a great meat alternative so don’t be afraid to experiment with it in your favorite dishes.

If you’re having a long day and are in need of a pick-me-up, edamame is the perfect snack that will do the trick. Its high protein content can also help with weight loss so make sure that snack drawer is always full!

Like most seafood, snapper is rich in protein and does not contain carbohydrates. The firm, mildly flavored fish can be prepared very simply and served broiled, baked, steamed, poached or grilled so have fun with it!

If you’re wondering if you incorporate enough vegetables into your diet, the answer is probably no. The truth is, you can really never have enough veggies…so today’s post will be dedicated to hearty and healthy greens - part 2! This week’s ingredient highlights are quite fun, if you will, in that the vegetables that are featured are interesting and almost unusual, both in texture and taste.

Not only does frisee sound fancy, but it is also a great source of folic acid, manganese and vitamins A, C and K. Frisee is a salad green in the chicory family, along with Belgian endive, radicchio and escarole. Its slightly nutty taste is a great touch to any dish!

Like frisee, swiss chard is packed with vitamins A, C and K as well as potassium and iron. Regular consumption has been found to prevent osteoporosis, iron-deficiency anemia and cardiovascular diseases so be sure to include it in your salads.

imageMy ultimate favorite green leafy vegetable is arugula. As in other greens, arugula is very low in calories and high in minerals, especially copper and iron. Not only is arugula favored in salads, but it is also commonly used as a garnish and taste enhancer.

If you’re feeling extra adventurous, blend your favorite veggies into a juice! :)

I hope you’re all enjoying your long weekends and are flu-free HelloFreshers! If you need a little pizzazz in your life, you’ve come to the right place. This week’s delivery of Pork Kimchee with Noodles, Tomato, Barley and Beef Stir Fry, Chicken Fettuccine, Mustard-Glazed Fish, Black Bean and Corn Stew, Vegetable Enchiladas and/or Wild Rice Stuffed Squash consists of several fresh herbs that will spruce up your dishes.

Cilantro, also known as coriander, is a popular Mediterranean herb packed with antioxidants, essential oils and dietary fiber and is one of the richest sources for vitamin K. Don’t be afraid to use cilantro to decorate and add flavor to your favorite meals!

Similar to cilantro, chives are a great source of fiber and vitamin K, along with vitamin A. They are one of the most sought-after ingredients used for flavoring and garnishing recipes. Their subtle onion flavor and bright green color are a great touch to any dish.

Last but not least, dill contains numerous compounds that are known to have disease preventing and health promoting properties. It makes a beautiful, textured garnish and is commonly used in the preparation of sauces and soups. Try using dill seeds as well!

Can vegans stomach the unpalatable truth about quinoa?

The appetite of countries such as ours for this grain has pushed up prices to such an extent that poorer people in Peru and Bolivia, for whom it was once a nourishing staple food, can no longer afford to eat it. Imported junk food is cheaper. In Lima, quinoa now costs more than chicken. Outside the cities, and fuelled by overseas demand, the pressure is on to turn land that once produced a portfolio of diverse crops into quinoa monoculture.

In fact, the quinoa trade is yet another troubling example of a damaging north-south exchange, with well-intentioned health and ethics-led consumers here unwittingly driving poverty there. It’s beginning to look like a cautionary tale of how a focus on exporting premium foods can damage the producer country’s food security. Feeding our apparently insatiable 365-day-a-year hunger for this luxury vegetable, Peru has also cornered the world market in asparagus. Result? In the arid Ica region where Peruvian asparagus production is concentrated, this thirsty export vegetable has depleted the water resources on which local people depend. NGOs report that asparagus labourers toil in sub-standard conditions and cannot afford to feed their children while fat cat exporters and foreign supermarkets cream off the profits. That’s the pedigree of all those bunches of pricy spears on supermarket shelves.

Even worse, is this all simply because of a fad? Are we going to ruin an entire food culture because some of us, who already have the luxury of getting our nutrients though a variety of foods, have decided quinoa is the latest silver bullet superfood?
